Every bag of Nsom & Sons cocoa passes through a rigorous, hands-on process — from harvest in the farms of Cameroon to certified export-ready shipment. Here is how we do it.

Why Process Matters

The difference between good cocoa and exceptional cocoa is not just the variety — it is what happens after harvest. Our process is designed to preserve the natural flavor potential of Cameroonian beans while meeting the strictest international quality benchmarks.

Harvest

Direct Farm Collection

We work directly with over 40 cooperatives across Cameroon's Centre, South, and Littoral regions. Ripe cocoa pods are harvested by hand at peak maturity, ensuring only the best beans enter our supply chain. Our field agents are present at collection to verify quality at the source.

Fermentation

Controlled Fermentation

Freshly harvested beans are fermented in traditional wooden boxes for 5–7 days under carefully monitored conditions. Proper fermentation is critical — it develops the complex flavor precursors that chocolate makers prize and reduces bitterness in the final product.

Drying

Sun Drying to Optimal Moisture

After fermentation, beans are spread on raised drying tables and sun-dried for 7–14 days. We target a moisture content of 7–8% — the international standard for safe storage and shipment. Beans are turned regularly to ensure even drying and prevent mold.

Grading

Rigorous Quality Grading

Every batch undergoes a full cut test and visual inspection by our trained graders. We assess fermentation rate, moisture, bean count per 100g, and defect percentage. Beans are sorted into Grade 1 Premium, Grade 2 Standard, or Organic Certified categories based on results.

Packaging

Export-Grade Packaging

Graded beans are packed into new 60–65 kg jute bags with inner polypropylene liners to protect against moisture during transit. Each bag is labeled with grade, lot number, origin cooperative, and harvest date — providing full traceability for every shipment.

Export

Documentation & Shipment

We handle all export logistics from our warehouse in Douala. This includes phytosanitary certificates, certificate of origin, quality inspection reports, and bill of lading. We work with established freight partners to deliver to ports in Europe, Asia, and the Americas on schedule.
